Recipe of the Week: Creamed Cauliflower
Creamed Cauliflower (tastes like mashed potatoes!)
– One head cauliflower
– 1 leek
– ¼ cup unsweetened almond milk
– 3 Tbsp. olive oil
– 1 large garlic clove
– 1 tsp. salt
– ½ tsp ground pepper
Steam cauliflower until soft. Saute leek and garlic in oil until tender. Blend all ingredients in Ninja or food processor until smooth. Add about ¼ cup unsweetened almond milk to thin. Enjoy!
