A Midwestern “Hot Dish”

We know how you Midwesterners love your Hot Dishes (better known as casseroles in other parts) so Chef David put this low-cal one together with you in mind.

1 pkg. lean (7% fat) ground turkey 1 tsp. salt
2 strips turkey bacon from package 1 Tbsp. tamari (natural soy)
1 zucchini, medium grated 1 Tbsp. Italian seasoning
½ onion, chopped 3 eggs
6 mushrooms, sliced
½ pkg. (4 oz.) almond mozzarella cheese (available at Town and Country)
This cheese is made primarily from almonds with some dairy, and is much lower in calories and carbohydrates than full dairy cheese. (No, it doesn’t taste as good as regular cheese, but it works way better for weight loss.)

Pre-heat oven to 350 degrees. Mix all ingredients in mixer except cheese and put in a 9 x 12 baking pan. Bake 25 minutes until firm. Sprinkle almond mozzarella cheese over top for last 5 minutes of baking. (should be over 160 degrees internal temp)
Options: Add leftover veggies cooked or raw: tomatoes, etc. Cut small and mix in with other ingredients before baking.
