Recipe of the Week: Moroccan Chicken for Slow Cooker

– 1 chopped tomato

-1/2 chopped onion

– 1 clove minced garlic

– 1 cup chicken broth

– 1/4 cup raisins

– 1 tsp. coriander

– 1/2 tsp. cinnamon

– 1/4 tsp. salt

-1/8 tsp. cayenne (optional)

– 1 1/2 lbs. chicken breast

-1/4 cup pitted and halved black olives

In a slow cooker, combine vegetables, garlic, broth and raisins  Combine and stir spices in a small bowl. Rub spice mixture into chicken. Arrange chicken on top of vegetables in slow cooker. Cover and cook for 4 hours on high or 8 hours on low. Stir in olives when ready to serve.
