Chicken Veggie Soup
1 lb. chicken breast cut into small pieces
3Tbsp. olive oil
½ onion, chopped small.
1 head broccoli, cut into small pieces
2 cloves garlic, chopped small
1 tsp. poultry seasoning or fresh herbs (Rosemary, Basil, Thyme, or Oregano)
1Tbsp. Tamari (natural soy sauce)
1 tsp. salt
½ cup white wine
1 quart water
½ bunch of cilantro (optional)
Heat soup pan and add olive oil. Sauté onions in soup pan until soft over medium heat. Add chicken and continue sautéing until chicken is mostly done. Add garlic and sauté for another minute. Then add water and the rest of the ingredients except cilantro. Bring to a slow boil, then turn down heat and simmer for about 10-15 minutes. Add cilantro just before serving.
